Carson Valley Inn guests will continue to enjoy most-affordable nightly dinner specials in Katie's Country Kitchen during February plus a prime rib and king crab legs dinner for two on Valentine's weekend.

A different dinner special is offered each night of the week in February and the common bond is hearty portions, value-packed pricing and comfort-food flavor. Monday is Italian night with your choice of lasagna or chicken Parmesan. Two-for-one prime rib night is every Tuesday in Katie's - buy one prime rib dinner and the second prime rib dinner of equal or lesser value is free.

A beef stew special is served every Wednesday. On Thursday nights, there's a smoked corned beef and cabbage special with boiled potatoes and horseradish cream sauce.

Friday night's captain's platter in Katie's features fried catfish, clams and shrimp, served with hush puppies and cole slaw. Saturday is barbecue night with choice of a large portion of ribs or two chicken breasts - or a combination of ribs and chicken. Katie's Sunday special is the Chandler chicken dinner including southern fried chicken with mashed potatoes and cole slaw. Katie's dinner specials are served 4-9 p.m. except for the Sunday special which starts at 2 p.m.

On Valentine's weekend, Katie's is serving a prime rib and king crab legs dinner for two on Saturday and Sunday nights, Feb. 13 and 14 from 4-10 p.m. Katie's Valentine's dinner special also includes potato, vegetable, soup or salad and a bottle of Champagne.

Katie's offers a ham steak and eggs special available 24 hours, every day. Enjoy ham steak, two eggs any style, hash browns and toast.

Dining in Katie's is more convenient for INN Club members with PointPay. It's no longer necessary to stop at the INN Club booth for a comp slip; you can now redeem earned points toward your check by swiping your card right at the Katie's cashier.

Under new owner Mike Pegram, the Carson Valley Inn remains open this winter during a major casino remodeling to be completed by mid-March with many casino areas opening sooner. In addition to many new slot games, installation of a state-of-the-art AAON air handling system is reducing casino smoke and will be even more effective after temporary construction walls come down and the system is balanced.

A newly designed pit table games area will open by the end of February and include multiple flat-screen televisions. A new 3,300-square-foot entertainment area will open in mid-February with 29 new flat-screen televisions, an expanded and modernized sports book, an entertainment stage with dance floor, a lounge and an island sports bar.

Also part of the remodeling project: new carpeting, softer lighting, new chairs at all gaming positions, new ceiling and wall treatments and tiled entrance ways.

The restaurant portion of Fiona's is also being remodeled and will reopen as CV Steak Restaurant by mid-March.
