If any of you had the good fortune to experience the unique cuisine of Chef Dougalas Maquoy, you must know how saddened I was to lose him from this area. Dougalas brought culinary elegance to Minden, similar to a New York or San Francisco dining experience. What a treasure right in our own backyard. He is not only a genius at combining herbs and spices, but he also has knowledge of nutrition, focusing on using the freshest of ingredients, including vegetables and fruits from the local farmer's market. Being a clinical dietitian, I know the benefits of whole, fresh foods and the importance of preparing them appropriately.
I searched for this talented chef, hoping that he had not returned to Belgium, his country of origin. Following many calls and inquiries, I found Chef Dougalas Maquoy at Indigo in the Minden Village. To dine with Dougalas is not just having a meal; it is a memorable culinary experience. Perhaps we can convince Dougalas to stay in Minden. Indigo may be the restaurant that puts Minden on the culinary map.
